Capers

Capers are the immature, unripe, green flower buds of the caper bush (Capparis spinosa or Capparis inermis). Valued for the burst of flavor they add to dishes, capers are preserved pickled or dried. They add tartness and texture to a wide variety of recipes, including fish dishes, pasta, stews and sauces.
