Juljen / Diced Apricot

Dried apricots of Turkish origin are the fruit of the apricot tree (Prunus armeniaca), naturally sun-dried, pitted and desulfurized or sulfurized to retain color. Apricots are cut into smaller pieces by cutting them into dice. There are two main varieties known as "Malatya" and "Urgup". These names identify the fruits according to their main growing areas in Turkey. When treated with sulfur dioxide (SO₂), the color is vibrant orange. Organic fruits that are not treated with sulfur vapor are darker in color and have a coarser texture.
